Seriously. If there was one word to describe these, it would be HEAVEN!

I try to avoid using the oven as much as possible in the summer because it just gets WAYYYY too hot in my apartment. No-bake desserts are perfect plus they are refreshing and can be prepared ahead of time.

So, Coconut Passionfruit Bars. Lots of my favorite flavors here, layered in one delicious, bright and fruity package. Coconut, macadamia nut, cashew, vanilla and tangy/sweet passionfruit.

The crust. I’m pretty much obsessed with this macadamia + cashew + coconut combination at the moment. Seriously, this life right now.

You just make the crust in your food processor or Vitamix and it’s full of macadamia nuts, cashews, unsweetened shredded coconut, almond flour, coconut oil and a touch of maple syrup. Once you press the crust into the bottom of your pan, there is no need to clean out your food processor or blender to make the filling. Don’t you just love when recipes require minimum cleanup?!

For the filling, we use raw cashews + coconut milk + coconut oil + maple syrup + vanilla bean paste. Make sure that you soak the cashews in water overnight or at least 4 hours. If you are short on time, you can soak them for 30 minutes – 1 hour in hot water, but the filling might not be as smooth.

Ingredients 

Crust

  • 1/2 cup raw cashews
  • 1/4 cup macadamia nuts
  • 1/4 cup almond flour
  • 3/4 cups shredded unsweetened coconut
  • 2 tbsp coconut oil
  • 1 tbsp maple syrup
  • 1/4 tsp salt

Filling

  • 2 cups raw cashews soaked in water overnight or at least 4 hours and drained* (see notes)
  • 1/2 cup coconut milk canned
  • 1/4 cup coconut oil
  • 1/3 cup maple syrup
  • 1 tbsp lemon juice
  • 1 tbsp vanilla bean paste
  • 4-5 passion fruit pulps
  • 1 tbsp maple syrup

Instructions 

  • Line an 8 x 8-inch pan with parchment paper and lightly grease with coconut oil.
  • To make the crust, add cashews, macadamia nuts, almond flour, shredded coconut, coconut oil, maple syrup, and salt in the bowl of a food processor or blender. Process until it forms a crumbly mixture. Press the crust evenly into the bottom of the prepared pan. Refrigerate for 15 minutes.
  • In the same food processor or blender, combine all the filling ingredients except the passionfruit pulps and 1 tbsp maple syrup. Process for 2-4 minutes, or until the mixture is smooth and creamy. Scrape down the sides if necessary. Once mixture is smooth, taste for sweetness and adjust if desired.
  • Pour the filling over the chilled crust and smooth out the top with a rubber spatula. Place in the freezer to set for 30 minutes.
  • While the filling is setting, combine the passionfruit pulp and 1 tbsp maple syrup in a small saucepan over medium high heat. Cook for 3-5 minutes, or until mixture slightly thickens. Cool slightly before pouring over filling. Place bars in refrigerator to set completely for at least 3 hours.
  • Cut into bars and refrigerate until ready to serve!

Notes

*If you are short on time, soak cashews in hot water for 30 minutes-1 hour

  1. Hi! This recipe looks absolutely amazing, can’t wait to try! Currently quarantined and don’t have macadamia nuts (sadly can’t get them either)…would walnuts work ok as a substitute? I have almonds, walnuts or cashews those are currently my nut choices….thanks!!

    1. Hi Emily! If you don’t have any macadamia nuts on hand, I suggest using cashews instead, but any almonds and walnuts will also work here 🙂

    Yummmm. Just in the process of getting my husband off refined sugars and dairy. Found this recipe. Oh my goddess…. yummm… got given a bag if oassionfruits the oyher d as y… snd was like… what to mum ske… hmmmm…. thanjs a bunch. I skso love yhe cashew nut disking as a substitute gor condensed milk etc… yay…
