No-Bake Peach Tart ... YUM!!

A super simple no-bake tart made with a nutty crust, yogurt sweetened with a touch of honey, and lots of fresh peaches.

Even though its September and everyone seems to getting into “fall mode” – aka pumpkin everything season, it’s technically still summer. Well, at least for another week.

I haven’t gotten into the pumpkin spice latte craze quite yet because I’m still trying to enjoy the last few days of summer. I had a crazy busy summer, so these last few days of the season are the perfect time to regroup and get back on track.

I’m all about eating seasonal fruits and late-summer peaches are one of my favorites!

I also love when recipes require very few ingredients and little preparation time.

This Peach Tart is very easy to make and requires no baking!

It’s also quite healthy and can be enjoyed as dessert, a snack, or even breakfast!

The crust is loaded with nutty goodness. You just throw all the ingredients into a food processor and your tart is almost ready!

Then make the filling which is simply yogurt sweetened with a touch of honey.

And then the fruit! Thinly slice those perfectly ripe juicy peaches I was talking about earlier and place them in the tart shell.

If you want some extra sweetness, drizzle the peaches with a little bit of honey and you its good to go!!

No-Bake Fresh Peach Tart

Ingredients 

  • Crust
  • 1 1/2 cups walnuts 190 g
  • 1 1/2 cups almond flour 165 g
  • 1/4 cup unsweetened shredded coconut 25 g
  • 1 1/2 tbsp coconut oil 20 g
  • 3 tbsp honey 70 g
  • 1/2 tsp cinnamon
  • Filling
  • 24 oz strained yogurt Icelandic-style or Greek
  • 3 tbsp honey 70 g
  • 3-4 ripe peaches

Instructions 

Crust

  • To make the crust, place walnuts, almond flour, shredded coconut, coconut oil, honey, and cinnamon in a food processor. Process until the mixture becomes sticky and comes together.
  • Remove the mixture and press it into a tart pan with a removable bottom. Refrigerate for at least 30 minutes.

Filling

  • While the crust is in the refrigerator, beat together the yogurt and honey until well combined. Pour it into the tart shell and use a rubber spatular to spread it evenly. Place the tart back in the refrigerator.
  • Cut the peaches while the tart is in the refrigerator. Cut each peach in half and then thinly slice. After 30 minutes, arrange the peach slices over the filling. Drizzle with extra honey if you have a sweeter preference.
